At last Sunday's farmer's market, Eaton Farm swapped one of their huge beautiful zucchini for some soap. I just love working at Farmer's Markets because I have access to the best produce around!!
I digress, back to the recipe! As I said this recipe is so versatile you can add so many ingredients to it each time and it will come out completely different!! Here is what I did last night.
Wash and cut the zucchini in half. Remove and discard the seeds.
Brown 1 pound of ground beef with 1 medium onion that has been chopped.
Add a jar of your favorite spaghetti sauce.
I also added a small jar of canned mushrooms.
Preheat the oven to 350 degrees.
Place the zucchini in a large enough baking dish.
Spoon the meat mixture into the scooped out portion of the zucchini.
I sprinkled the top with shredded sharp cheddar cheese.
Cover the dish with aluminum foil and bake for 45 minutes.
Variations - I have used pork sausage in place of the ground beef. I have added eggplant and peppers to the meat mixture. Instead of the cheddar cheese, try mozzeralla cheese or ricotta cheese. Just let your imagination run wild!!
