BUT, if you don't like goat meat, you can easilily substitute beef or your choice of meat in her recipes. Last night I made her Three Layer Goat Casserole - OH MY was it good and so easy to make!! We didn't have any goat meat, so I just used ground beef.
Here is the recipe with the ground beef:
2 lbs ground beef
2 cloves garlic, minced
1 onion, finely chopped
1 T dried basil
2 15 oz cans of tomato sauce
1 8 to 10 oz. package of spinach fettucini noodles
1 cup sharp cheddar cheese
1 8 oz package cream cheese
1 cup sour cream
1 cup milk
Brown the ground beef in a skillet. Mix in the garlic, onion, tomato sauce, and basil. Cover and simmer for 30 minutes. Meanwhile, prepare the noodles according to the directions on the package. Drain.
Separately, mix the cream cheese, sour cream and milk.
In a 4 quart casserole dish, spoon the meat mixture in first, top with the noodles, sprinkle the cheddar cheese evenly, then pour the cream cheese/sour cream/milk mixture over the noodles and meat.
Bake at 350 F for 45 minutes.
