4 or 5 chicken thighs or breasts (I took the skin off - your choice)
1/4 to 1/3 cup Dijon mustard
1/4 to 1/3 cup honey
2 tp 3 springs of rosemary (or a generouos sprinking of dried rosemary)
Preheat the oven to 350 degrees.
In a medium size bowl, mix the mustard with the honey. Add more mustard or honey to get the flavor that you want.
Lay the chicken in a shallow casserole dish. Spoon the honey mustard sauce over the chicken. Place the rosemary sprig on top of each chicken piece.
Bake for 45 minutes.
Remove from oven. Sprinkle the chicken with black pepper.
I served the chicken with fresh green beans out of the garden but a nice salad would be great with this.
Now isn't this an easy recipe!! And it tastes heavenly!!
