Good Day to Stay Inside

It is your typical dreary Cincinnati Spring day - overcast and cold.  The only thing we are missing is the drizzling rain.  But, of course, we had that yesterday.  Good day to stay inside. 

Now that the baby goats are in the process of being weaned.  I have plenty of wonderful goat's milk on hand!  What to do with it.  What a dilema!!

The first thing I made is goat's milk ricotta cheese - oh so easy!!

1 gallon of goat's milk
1/4 cup apple cider vinegar
3 T butter
1/2 t baking soda

Pour the milk into a large pot
Heat the milk to 195 degrees.
Remove the pot from the heat
Add the apple cider vinegar, while stirring the milk
The milk should curdle.
Line a large colander with cheesecloth
Very carefully pour the contents of the pot into the colander.  This is VERY HOT!!  So please do this very slowly and carefully.
Let the cheese drain for about 10 to 15 minutes.
Melt the butter.
Place the drained cheese into a bowl, add the melted butter and the baking soda.  Mix!

Best ricotta cheese you have ever tasted!! 

Unfortunately, this only works on whole milk - like goat's milk or cow's milk.  This will NOT work on the milk you buy in the store.  It is has been ultra-pastuerized.  

Still had more milk left over.  What is a person to do!!

So I made goat's milk ice cream.  Can life get any better than this!!

Here is the recipe:

2 large eggs
3/4 cup sugar
2 cups heavy whipping cream
1 cup  goat's milk
2 teaspoons vanilla extract

1.  Whisk the eggs in a mixing bowl until light and fluffy, for about 1 to 2 minutes
2.  Whisk in the sugar, a little at a time, until the sugar is completely blended into the eggs.
3.  Pour in the cream, goat's milk and vanilla into the egg/sugar mixture and whisk to blend.
4.  Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions

Life on earth will never be the same after you have tried REAL homemade ice cream (not the brand) BUT REAL HOMEMADE ice cream.  Trust me!!  It is so good!!  Even with store bought milk, life can be good for you, too!!
