Apple Cranberry Pie

Apple Cranberry Pie


Ingredients:


Your favorite pie dough recipe for a single crust (or heaven forbid) a store bought refrigerated pie crust (LOL!!)




Filling:


4 cups sliced, peeled apples (I used golden delicious and winesaps - but any cooking apple would work - this is what I had in the refrigerator)

2 cups fresh or frozen (thawed) cranberries
2 tsp vanilla extract
1/2 cup white granulated sugar
1/4 cup all purpose flour
1/4 cup packed brown sugar
1/2 t ground cinnamon
1/4 t ground nutmeg
Topping:

1/2 cup all purpose flour

1/3 cup packed brown sugar
1/4 t ground cinnamon
1/4 cup butter (at room temperature)
Instructions:

Prepare your crust according to your recipe or on the box and blind bake.

Preheat the oven to 375.

In a large bowl, mix the apples, cranberries and vanilla.

In a smaller bowl, combine the remaining dry ingredients.

Add the dry ingredients to the fruit, toss to coat, making sure all the fruit is covered.

Spoon into the baked pie crust.

In another bowl, combine the dry ingredients for the topping.   Using a pastry blender or a fork, cut the butter into the topping until it is crumbly.  Sprinkle evenly over the filling.

Bake the pie for about 45 to 55 minutes.

After 15 to 20 minutes, cover the crust edges with strips of foil to prevent them from getting to brown.

Remove and let cool on a rack (if you can!!).

Wonderful with ice cream!!!

Verdict:We love this pie at Christmas!!  Did you know you can freeze those bags of cranberries?  Buy a couple of bags and just throw them in the freezer.  When you need a bag or two, just bring them out and let them thaw.  Viola!! cranberries!!  I hope you enjoy this pie as much as we do!!
