I found this recipe on the www.motherrimmy.com website. Don't ask me how I ended up there - I have no idea!! But, I made this last night and it is definitely a keeper!! The best thing is that you can prepare this in less than a half hour - does it get any better than this!!
Ham and Potato Skillet Dinner
1 T olive oil
1/2 onion - diced
2 to 3 cloves of garlic, minced
4 large potatoes, diced (I used the red "new" potatoes) - I didn't peeled them
4 cups very thin asparagus, sliced in 1" pieces
4 to 5 fresh sage leaves, minced or 1 t dried sage
1 cup chicken broth
6 to 8 oz ham, cubed (I bought a package of cubed ham from the store)
Preheat a large skillet over medium heat. Add the oil and onion - saute for 5 minutes to soften the onion. Add the garlic, asparagus and potatoes - your house should smell WONDERFUL!!! Cook for 6 to 8 minutes until vegetables are crisp tender. Stir constantly so vegetables do not stick and burn!!
Add the chicken stock, sage and ham. Cover and cook for another 10 minutes until the vegetables are tender. Remove the cover. Allow the sauce to reduce for another 3 to 5 minutes. If desired, toss in about 1/4 cup parsley and serve!
