Goat's Milk Yogurt

It just doesn't get any better than this.  I LOVE yogurt!!  It is almost an addiction - LOL!  I eat it with almost every meal.    

So I decided to try making goat's milk yogurt. I know that Kroger's carries a goat's milk yogurt which I tried.  NASTY!!  Sorry folks whoever makes it.  I didn't like it at all!!

So after several failed experiments, I finally found a "recipe" that worked.    

For the first batch, I used a commercial yogurt I bought from the store.  Be sure to check the ingredients to see that it has "active yogurt cultures."  I used Oikos Vanilla yogurt.  After the first batch, always save 2 tablespoons for your next batch.

Goat's Milk Yogurt
1 quart whole goat milk (or you can use whole cow's milk)
2 T yogurt (see note above)
1/2 cup powdered milk (for goat's milk only!!)

Instructions:

Heat the milk to 185 degrees in a medium size pan
Remove pan from heat and let milk cool down to 115 degrees. (You have to do these two steps, otherwise the yogurt will not work!)
Pour milk into a separate container - I used a wide mouth mason jar.
Add yogurt (and powdered milk if using goat's milk - this makes a "thicker" yogurt) and cover
Place in a warm spot where the milk should stay at an even 115 degrees for the next 6 to 8 hours.
After 6 to 8 hours, the milk should have a custard like consistency.  This is the "curd".
Put the container in the refrigerator for 12 hours.  The curd will harden up.
You now have yogurt - it's a miracle!!
I added 1 T spoon of honey and some fruit - YUM!! 

REMEMBER save 2 T for your next batch!!
